Vietnamese Coffee Tutorial
As a child, I would watch my parents fill up the phin (slow-drip coffee filter) with Cafe Du Monde coffee grounds and pour rounds of hot water into the chamber to soak the beans. It was a slow, intentional process as they steadily returned to fill up the cup each time it emptied. I loved watching the dark black coffee fill up the cup drip by drip, stirring in the condensed milk turning it light and creamy, and pouring it over fresh crisp ice cubes, freezing into thin coatings on top like donut glaze.
My parents still make Vietnamese Coffee, although sometimes its instant now - Vietnamese people are innovative as hell. But occasionally, when I want to slow down and savor my morning, I’ll pull out my phin and perform the ritual of Vietnamese coffee. And then get hyperactive for 6 hours after but you know, it’s about the intention HAHA.
